Bonappetit.com introduces a way to kick up your corn on the cob this 4th of July! This recipe is a delicious twist on the old stand by corn on the cob. I agree that corn on the cob with a little butter and salt is great all by itself, but every once in a while it's fun to bring things to another level. This tasty topping is the perfect pair for our chipotle filet mignon, or try it alone as a pre STEAKNIGHT snack with some lime tortilla chips.Â
Ingredients:
2 Mangoes, Diced
1 1/2 Cup Canned Black Beans Drained & Rinsed
1/4 cup Red Sweet Pepper Diced
2 Green Onion Chopped
1/2 Jalapeno Chili Pepper, Seeded & Minced
2 Tablespoons Cilantro Minced
1 Lime, Fresh SqueezedÂ
Kosher Salt to Taste

Guy Fieri has some great ideas. I always love the idea of spicy and sweet. Thought you guys might enjoy this one. Perhaps with a little thin sliced flank steak. Probably could go with a bunch of different  dishes.Â
