At Steaknight Magazine we are always on the hunt for the most creative, odd sounding recipes and this one was exactly what we are looking for. It is another terrific pallet cleansing side dish that works perfectly with a full flavored steak or any other delicious meat you have on the grill.

Ingredients:
2 teaspoons balsamic vinegar glaze Or aged balsamic vinegar
2 fresh limes juiced
1/4 cup extra-virgin olive oil
Sea salt and fresh ground pepper
3  large tomatoes
1 to 2 teaspoons granulated sugar
2 tablespoon chopped fresh tarragon
4-6 strawberries, hulled and cut into small pieces
1 cup cubed cold watermelon

Directions

Whisk the balsamic vinegar, lemon juice and olive oil in a bowl. Taste for seasoning; add salt and pepper. Set aside.

Slice the beefsteak tomatoes. Arrange in a single layer; season with salt and pepper and sprinkle with the sugar. Transfer to a bowl and drizzle with half of the dressing. Add the tarragon and strawberries; toss.

Divide the tomato mixture among plates. Drizzle with more dressing and top with the watermelon. Serve immediately.

Keep your watermelon ice cold and tomatoes at room-temperaturefor this dish.  The contrast of temperatures gives the salad an extra-fresh taste.
