Delicious pair with Flat-Iron steaks.
Ingredients:
2 Avocados
1/2 Cup Of Softened Butter
1/4 Cup Lime Juice
2 Tablespoons Chopped Parsley
1/2 Teaspoon Cayenne Pepper
Seed, peel and chop 2 ripe avocados. In a medium bowl combine the chopped avocado, butter, lime juice, parsley, salt, and cayenne pepper. Using a fork , gently mash the ingredients together until thoroughly combined. Pour mixure into a small bowl and chill until almost firm.

This tasty topping is the perfect pair for our chipotle filet mignon, or try it alone as a pre STEAKNIGHT snack with some lime tortilla chips.Â

2 Mangoes, Diced
1 1/2 Cup Canned Black Beans Drained & Rinsed
1/4 cup Red Sweet Pepper Diced
2 Green Onion Chopped
1/2 Jalapeno Chili Pepper, Seeded & Minced
2 Tablespoons Cilantro Minced
1 Lime, Fresh SqueezedÂ
Kosher Salt to Taste

Last week on our STEAKNIGHT a new marinade had emerged. My friend Doc pulled this out and it became an instant favorite amoung the group. It was one of the most distinct flavors I have ever tasted. If I didn't share this with you it would just be wrong. This steaks flavor has more to do with the cooking technique then it does with the marinade. The key in this one is the oil.
