Ingredients:

  • 8 small red potatoes (about 2 inches long; 1 ¾ lbs)
  • ½ cup grated Parmigiano-Reggiano
  • ½ cup Extra Virgin Olive Oil 
  • Black Pepper
  • Salt

Generously cover potatoes with cold water in a 3- to 4- quart pot, add 1 TBS salt. Boil until potatoes are almost tender (10-15 minutes).  Drain.  Transfer to a baking sheet and lightly crush to about ¾ thick with a spatula or potato masher, keeping potatoes intact as much as possible. Brush with extra virgin olive oil, sprinkle with fresh ground pepper, and grated Parmigiano-Reggiano.  Bake in a 350° oven for 30 minutes.  (Potatoes can be kept warm in a 200° oven for 30 minutes.
