Skirt steak is a flat steak loaded with flavor. If you live in the U.S. then the Skirt Steak comes from the plate portion of the cow. If you live in the U.K. then it comes from the flank portion. Either way it has a lot of fatty good marbling. This makes it flavorful and delicious. Cooked properly makes for a great steak.
