Skirt steak is one of the flat steaks the Skirt Steak is a tough cut of beef but still has great flavor. If you live in the U.S. then the Skirt Steak comes from the plate portion of the cow. If you live in the U.K. then it comes from the flank portion. Either way it has a lot of fatty marbling. This makes it flavorful, but a bit tough. Cooked properly makes for a great steak.

If you never grilled up a skirt steak before, you probably have seen it in fajitas. 

To tenderize a plate or skirt steak it needs to be marinated overnight or even 2 nights. Best if cooked rare to medium rare, try not to over cook and it will be fantastic. The skirt steak also has a broad grilling surface and holds on to marinade nicely.
