Flank

This chart shows all of the cuts of beef for the many types of steaks.

The flank steak is technically not considered a steak, but it has become wildly popular over the years. The flank is the belly muscle of the cow and is usually cut into slices. This steak is very flavorful but contains almost no fat and is a tough cut of beef.

If you never grilled up a flank steak before, you probably have seen it in fajitas.

To make tenderize a  flank steak it needs to be marinated overnight or even 2 nights. Best if cooked rare to medium rare, try not to over cook and it will be fantastic. Flank is one of my favorite cuts because of its excellent flavor. It is broad grilling surface holds on to marinade nicely.
