Chuck

This chart shows all of the cuts of beef for the many types of steaks.

Cut from the shoulder , this steak is no more than an inch in thickness most times. This cut usually weighs around 10 ounces and is very lean. Chuck steak tends to be very tough but is still can be a wonderfully delicious steak. Its is an excellent steak for braising, but is also great on the grill as long as it is marinated and is not overly cooked. You may have heard the center cut of this steak be called a Ranch Steak. A lot of times you will see Chuck steak ground into chop meat for hamburgers. Let me tell you, if ever you have the chance make your burgers with ground Chuck you will not be disappointed.

From the chuck section you will also see a steak called the Flat Iron, also known as the Teres Major. In many butcher shops you will see them displayed as a “top blade” roast, and cuts from that roast are called “top blade steaks”. When marinated, this steak is delicious when grilled, just be sure not to over cook it.
